The production of Rhum Industrielle is closely linked to the sugar industry. Can be made year-round, in opposition to Rhum Agricole that can only be made during sugarcane growing season, as molasses is shelf-stable. The key steps include:

  1. Molasses Extraction: After sugarcane is processed to extract sugar, the remaining molasses, a byproduct of sugar production, is collected.

  2. Fermentation: The molasses is diluted with water and fermented, often with the addition of commercial yeasts. Fermentation can take several days to weeks.

  3. Distillation: The fermented molasses mixture is distilled in column stills or pot stills. Column stills are more commonly used for their efficiency and ability to produce large quantities of rum.

  4. Aging: Like Rhum Agricole, Rhum Industrielle can be aged in oak barrels and similar aging vessels. Aging times can vary widely, resulting in a range of young and mature rums.
