- 60ml Elevated Gin
- 30ml fresh lime juice
- 15ml simple syrup
- Ice
- Garnish: thin lime wheel

Method
- 01Shake all ingredients with ice.
- 02Strain into chilled coupe or rocks glass over a large ice cube.

The Story
The Gimlet was a sailor's drink. Royal Navy officers mixed gin with lime cordial to fight scurvy on long voyages. It was medicine that tasted like a dare. The original recipe called for Rose's Lime Cordial, a preserved, sweetened lime juice that kept at sea. We've replaced that with fresh lime and simple syrup, because we have refrigeration now, and because fresh is always better than preserved. What remains is the spirit of the original: lean, tart, unapologetically strong. A drink that crossed oceans. Now it's crossed into Chiang Mai.
