  • 25ml fresh lemon juice
  • 15ml simple syrup
  • 60ml soda water
  • Ice
  • Garnish: lemon slice, maraschino cherry

  1. 01Build in a tall glass over ice.
  2. 02Add gin, lemon juice, syrup.
  3. 03Top with soda water. Stir gently. Garnish.

In 1874, New York was gripped by a bizarre hoax. Strangers would tell you that a man named Tom Collins had been saying terrible things about you across town, and when you stormed off to find him, he was never there. The joke spread so fast that bartenders started making a drink in his honor, just to have something to hand the furious and the fooled. The Tom Collins has been cooling tempers ever since. Long, lemony, lightly sweet, endlessly refreshing. 150 years of loyal service and still the best drink in a tall glass.
