  • 20ml honey syrup (2:1 honey to water)
  • Ice

The Story

"The bee's knees" was 1920s American slang for the absolute best of something. The cocktail earned the name honestly. It was a Prohibition drink, built to make rough spirits taste like something worth drinking. Three ingredients: spirit, lemon, honey. No shortcuts, no distractions. The irony is that it tastes even better with a gin that needs no disguising. Imagin White's peach fruit tea and jasmine notes meet the honey halfway, creating a floral sweetness that feels almost inevitable. Thailand has been producing some of the finest honey and botanicals in the world for centuries. This drink finally puts them together properly.
